Gingerbread for Easter?

I'm probably the only person who made gingerbread bunnies for Easter~  My grandson loves my gingerbread cookies and so do I.  There is nothing like a plain gingerbread cookie with tea in the afternoon.  Here is my recipe for gingerbread if you'd like to make some Easter gingerbread bunnies. I frosted some of the bunnies but they were not photo-worthy! We like our gingerbread plain anyway.

Can you spy the 3 bunnies in the planter looking over the violet?  I bought the bunny planter last Easter and I am delighted to have kept the African Violet alive for one year and to have it bloom again in time for this Easter.

Easter wasn't my only reason for making gingerbread cookies. Yesterday, it was my birthday and I wanted to try the new cookie press set that was a gift to me from a a dear friend.  I thought the texture of the gingerbread might be perfect for the press and it was.  The set came with 3 different Paris landmarks - perfect for springtime in Paris or Milwaukee :)

It was such a fun and memorable birthday with grandson visits, flowers, gifts and birthday wishes. Our youngest grandson had his first birthday less than two weeks before mine.  My husband's birthday is next week and my oldest daughters' birthday is a week after that.  Spring is a prolific time in our family :)

Happy Easter and April to you all.  May they bring warmer weather our way!

  13. A belated Happy Birthday to you!
You aren't the only one to make gingerbread bunnies at Easter - I do too! I make small ones and ring them around the edge of a carrot cake that has been iced with cream cheese icing. One year I found little marzipan carrots, and I alternated them with the bunnies around the cake. It was very pretty!
