Grilled Chicken Salmoriglio


I found a recipe for chicken in a lemon sauce that sounded so intriguing...not only because of the sauce ingredients but also because of the method of preparing the dish. It's from a blog called The Italian Chef.

The chicken pieces are first grilled and then transferred to a large saute pan and finished in a lemon sauce.



I used the side burner on the grill, which made it very easy transferring the chicken pieces from the grill into the saute pan.



This chicken and a simple salad made for a wonderful meal with little fuss. My husband even commented on how delicious the chicken tasted. Now that's a successful recipe ;)

I think this would make a great Father's Day entree!

Grilled Chicken with Salmoriglio Sauce

Adapted from The Italian Chef

Serves 4

3 large garlic cloves, minced
1 teaspoon Mediterranean seasoning (or oregano or thyme)
1/2 cup light olive oil
Juice of 1 lemon and 2 limes (because that's what I had on hand but it tasted great!)
1/8 cup balsamic vinegar
Salt & pepper to taste
3 1/2 to 4 pounds chicken pieces

Pre-heat the grill.

Meanwhile, combine olive oil, lemon juice, balsamic vinegar, Mediterranean seasoning, garlic, salt and pepper in a small bowl and blend.

Season chicken with salt & pepper and cook on a medium-hot grill turning occasionally for about 25-30 minutes.

If you have a side burner on your grill, heat the side burner with a large saute pan. When the chicken is done grilling, transfer the pieces to the heated saute pan and pour the Salmoriglio sauce over the chicken. Turn the pieces in the pan frequently, for about 5 minutes. This step can also be done on your stove indoors. Place on a large platter and drizzle the sauce over the chicken to serve.

    But you know..I think I'll have to make this chicken..I find all too often the marinades and sauces get lost in the grilling..This must be good..Like a pashmina over your clothes:)

  7. Awwwwwww one of the best flashbacks ever. Such sweet pictures of your daugher. I don't remember seeing the cake. Its beautiful and I love the way it's presented on the silver pedestal. Very classic and clean! Your chicken recipe does look interesting. I will have to go check out that site. Beautiful roses! I didn't get a chance to walk in the rose garden at work this week..gotta stop and smell them soon :-)

  9. Susan, this is such a wonderful post. I could sit and look at wedding day photos all day :-) Such sweet pictures of your daugher. The cake is over the top gorgeous on the silver pedestal. I know we will enjoy the chicken, and I'm always looking for ways to make dinner on the grill in the summer. I would love to be in your rose garden...BEAU. We are going on a garden tour today, and I do hope they have roses :-)

  10. New ways to prepare chicken are always greeted with much appreciation in this house! I'm assuming that the chicken pieces called for the recipe are bone-in? I'm sure a boneless breast cut into manageable pieces would survive, if only given a shorter time on the grill.

  11. This chicken recipe sounds like a keeper and I will try it soon! I have to justify insisting to J that I needed a side burner that he said I would never use ;)

    Your roses are simply stunning - I wish I could smell them here.

    I loved the flashback to L & B's wedding! She is a gorgeous young lady as well as B...just think how handsome Baby Boy is going to be with that gene pool!
