I found these wonderful white chocolate confections at a local store called U-Bake. They're made by a our local chocolatier - Ambrosia Chocolate. I believe some Costco stores also carry their products also.
Even though I'm a dark chocolate devotee, there is something about white chocolate that looks so Christmas-y and festive for the holidays.
I started out my white-chocolate dipping adventure with some white chocolate covered strawberries sprinkled with sparkling sugar. Basically, all you need to do is start with clean and dry strawberries. Melt the white chocolate confection in the microwave in a small microwaveable bowl for about 30 seconds. Stir, and microwave for a little longer if the chocolate isn't completely melted. Do not microwave too long. With a spoon, drip the chocolate over the sides of the berries, spreading to cover, while holding the stem of the strawberry. I allowed them to harden on parchment paper and then drizzled a little more white chocolate on them and then added the sparkling sugar.
One of the main reasons I wanted to use white chocolate is I had seen white chocolate-covered pretzels just like these at a favorite store and thought I should try making them myself. I just needed to find the little white sprinkles which I also found at U-Bake. Using microwaved, melted white chocolate again, I dipped the pretzels in the melted chocolate and swirled them around with a wooden skewer until they were covered with chocolate. I used the skewer to lift them out and placed on parchment paper then added white sprinkles immediately.
Using the last of the white chocolate, I made a ganache using the same method in my recent hazelnut truffle post then rolled the white chocolate truffles in peppermint candy.
