My Favorite Coleslaw~


Are you hanging onto summer with all your might as we are dragged into September tomorrow? I know I am! Even though the calendar will say September 1st tomorrow, one of the biggest summer BBQ weekends will soon be upon us - the 3-day Labor Day weekend. Here in the Midwest, the weather forecast is looking great!

If you are planning a cookout with family or friends over the holiday weekend, here is a delicious coleslaw recipe to go with those hamburgers, bratwurst, chicken or hot dogs you may be grilling.  My husband loves this coleslaw! Not only is it delicious, I also like it because it calls for very little mayonnaise. For a large, 2 pound head of shredded cabbage, carrots and onion,  there is only 1/2 cup of mayo added.  I know many cooks are using Greek yogurt in place of mayonnaise, so I'm sure that would work well here too. If you like coleslaw, try this. You won't be disappointed.

The Best Cole Slaw

Adapted from Jim N Nick's Coleslaw
Printable Recipe

Yield: Makes 8 to 10 servings

1 2-pound head of green cabbage, quartered, cored, cut crosswise into very thin slices*
3/4 cup apple cider vinegar
1-1/2 cups sugar
1 cup peeled carrots, shredded (I use a box grater)
1/2 cup red onion, sliced
1/2 cup mayonnaise (I use Hellmans Lite)

*You may use packaged cole slaw mix if you prefer.

Place sliced cabbage into a very large bowl. Add the vinegar and sugar and stir together thoroughly. Cover the bowl and let the cabbage mixture stand for 30 minutes. Toss well, then cover and allow to stand for another 30 minutes longer. Drain cabbage.  (This can be made 8 hours ahead to this point. Simply cover and chill until ready to finish recipe)

Transfer drained cabbage back into the large bowl. Add shredded carrots, onions, and mayonnaise and toss to coat. Season with salt and pepper to taste.

Update:  Now I put the cabbage, carrots and onion all in the large bowl and brine them together.

I'm not sure if we will be grilling...since thunderstorms are forcasted here. I do like coleslaw though...yours is just how I like it...creamy! I don't like coleslaw that doesn't have mayo in it.

This is very much the same as the coleslaw that we like and make summer and winter. Only twenty days or so until fall. I plan on celebrating summer as long as possible!

I, too, love a good slaw ad will have to try this -- my creamy slaw is made with cream and sugar and then I do an oil and vinegar one. I've tried mayo but have never been pleased with it so will try this one next time I make slaw! I may become my favorite!

I adore coleslaw and for years would try to make it with different recipes and would always get disappointed; I have never seen this technique however and this is probably the one that reveals the secret to a good coleslaw!

We love cole slaw! I add a bit of powdered mustard and sweet pickle juice to mine. I don't use a recipe, so I don't know the measurements though. At the farm stand here I pick the largest head of cabbage, as they are all the same price, prob 2.00 this year. Usually a 10 pounder!

When I saw the title I knew that this would be a recipe worth trying. We have no barbecues planned for the holiday weekend, but a big bowl of coleslaw would be a nice thing to have on hand as a quick side dish.

Gosh you're making me hungry. I love cole slaw. As a matter of fact, I had some yesterday on a slaw dog.. with a side of cole slaw. We stopped at a little "mom and pop" restaurant on the way home from the beach. I'll try your recipe later this week. It looks delicious.

I love coleslaw too...one of the few people here who do! and the way you make it, is just how I love it...hate it when it is drenched in mayo! yours looks so crunchy and fresh...goes to show that even a simple coleslaw can be a piece of art visually and at the same time a spoonful of delicious energy!

I can't say that I am holding onto summer-It has been a scorcher this year. Living in North Florida, it will be November before I consider a sweater-even then its iffy (smile).

Grilling is something we can enjoy almost all year round and coleslaw is always a great side dish.

Hmmmmm, I do love cole slaw and many different varieties. This one sounds like a combination of two of my favorites. My very favorite is made with a maple syrup concoction.
