Fresh Tomato Pasta with Herbed Breadcrumbs "Montreal"


This is such an easy and wonderful fresh tomato pasta dish! I named it 'Montreal' because I first saw it on La Table de Nana's blog just a short while ago and Monique is a Canadian blogger. You can see Monique's version by clicking on the link.  I knew when my cherry tomatoes started to ripen, this would be one one of the first things I wanted to make with them.



The thing that intrigued me the most of about this pasta sauce is that you simply place all of the ingredients in a bowl in the morning and let them 'marinate' all day. The smell coming from the kitchen is amazing!

Fresh cut-up tomatoes, fresh chopped basil, a minced garlic clove or two and a good 1/3 cup or so of extra virgin olive oil - that's it! I covered the bowl with plastic wrap and stirred the tomato mixture occasionally throughout the day.


The other thing that was mentioned was the addition of  homemade croutons pulverized with more fresh basil which is sprinkled over the pasta and sauce.  I love to make homemade croutons with a loaf of good French bread from a local bakery.  I rub both sides of the slices of bread with olive oil, sprinkle them with freshly ground pepper, cut them into cubes and bake them on a baking sheet in a 350F degree oven for about 10 minutes.  My husband loves these so much that now I include the trimmed crusts when I bake them and he eats them as a snack before dinner :)

After the croutons have cooled, add them to a food processor or blender with a several leaves of basil and mince into breadcrumbs.



I warmed the marinated tomato mixture gently on the stove while the pasta was cooking.  Topped with the homemade basil breadcrumbs and some freshly ground Parmigiana Reggiano - this was just wonderful!

I think that bread crumbs are under-appreciated.. they add so much to a dish. Homegrown cherry tomatoes are so sweet... I just love them and often snack on them while I cook with them.

The idea of marinating the tomatoes is so very appealing to me. I think it is a creative way to really bring out the flavor of summer tomatoes.

I do a similar fresh tomato topping for pasta but the basil breadcrumbs and the all-day marinating really move this to a different level. Thanks to you and Monique we'll be enjoying this a day or so after Saturday's farmer's market!!

What a pretty dish it is. I think, if I'm very careful, and lighten up on the olive oil, that I could make this without cheating too much on my eating plan. (I don't dare say "diet" anymore.)

Beautiful and I loved it when I saw it on Monique's blog. I love Jacques' (Monique's husband) crushed croutons. Great addition with the basil. We can't keep our hands off of the croutons either. If I'm not careful, they're gone before you know it.

I made a similar dish with heirloom tomatoes. This is such a wonderful time of the year with all of the fresh tomatoes. You can't seem to go wrong with anything you do with them.

Just had a pasta dish at a great place with lots of cherry tomatoes, barely cooked, what a delight! I think the key here is fresh and coming from your garden! A treat worth any five-star meal anywhere.

YUM! Tomatoes are the most perfect food and if I were to pick one thing only to eat the rest of my life, it would be tomatoes. They are so versatile. There really is nothing like a hot pasta with fresh ingredients mixed in. This one sound delish. I do one with a bacon or pancetta base - just fry the lardons and toss them into the fresh hot pasta, then also toss almost what looks like a summer salad into the pasta at the same time: diced frsh tomato, or cherry tomatoes halved, finely chopped red onion, and fresh basil leaves slivered chiffonade style - sometimes diced peppers, too. It is really yummy - and, of course, lots of grated parm on top!

Fresh (uncooked) sauces are my summer favorite! I always add about a tablespoon of lemon zest to the mix. It brightens all the flavors. You don't need to marinate all day. A couple hours does it. I make mine with Sun Gold cherries or a mix of diced beef steaks. Summer on a plate!
